Chef Bruce Tretter's "Pasta with Lighter Alfredo Sauce"

Pasta With Lighter Alfredo Sauce

I love Fettuccine Alfredo but don't like the excessively full feeling after eating it, which

is largely attributed to the heavy cream in the sauce. The recipe here substitutes

evaporated milk for heavy cream, which far reduces the fat content and therefore makes

the Alfredo sauce less excessively filling. This recipe also uses garlic to add little more

flavor, zucchini or yellow squash for freshness and an optional shot of balsamic vinegar

for an added rounding out zing. All together, this pasta with lighter Alfredo sauce recipe

provides full-on flavor that tastes at least as good as standard Fettuccine Alfredo without

the added heaviness.

So here's the lowdown on Heavy Cream vs. Evaporated Milk.

Ounce for ounce, heavy cream has 100 calories, evaporated milk has 40 calories. That

means heavy cream has 2 ½ times more calories than evaporated milk. All the 100

calories in that 1 ounce of heavy cream are attributed to fat; only half or 20 calories in

evaporated milk are attributed to fat. Regarding fat content itself, 1 ounce of heavy cream

contains 10 grams of fat, while 1 ounce of evaporated milk contains 2 grams of fat.

That's a 5 to 1 difference.

Here are the ingredients you'll need for 2 people as a main dish or 4 people as a side dish:

Ingredients

(for 2-4 people)

½ Box or 8 Ounces Pasta

12 Ounce Container of Evaporated (non-sweetened) Milk

1 Cup Grated Parmesan Cheese

1 Zucchini or Yellow Squash

1 Garlic Clove

1 Tablespoon Butter or Margarine

Black Pepper

Balsamic Vinegar (optional)

Equipment

Large Knife

Cutting Board

Grater

Can Opener

Large Spoon

Measuring Cup

Medium Sized Pot

Colander

Timer

1. Start by filling a medium sized pot 1/2 - 2/3's full with water. Put the pot on the

stove and warm it over HIGH heat.

2. While the water warms, pull a garlic clove from a fresh garlic bulb. Crack the

garlic skin by covering the clove with the side of a wide bladed knife and pushing on the

side of the knife blade with the heel of your hand until you feel the garlic clove break

open. Then peel the garlic skin, anchor the garlic clove to the cutting board with curled

fingers cut the clove into thin slices and finish by chopping the slices you've made into

smaller pieces.

3. Rinse the zucchini, cut off the front end of the zucchini but leave the stem still

attached so that you have something to hold onto as you grate the whole zucchini

coarsely making sure to keep your hand away from the grating blades.

4. When the water comes to a full, big bubble boil, check the pasta package for the

recommended cooking time and set the timer for 2 minutes less than the time the package

recommends – the pasta will soak up more liquid when the evaporated milk is added

later. The pasta package I used to make this recipe recommended cooking 12 minutes for

firm pasta, so I set the timer for 10 minutes. Also, don't add any salt to the water, as the

pasta package might recommend as you'll get enough salt flavor from the grated

Parmesan cheese. With all that said, now add ½ box or 8 ounces of pasta to the

boiling water, start the timer, stir the pasta, and, as soon as the water comes back to a

boil, turn down the stove heat to MEDIUM.

5. While the pasta cooks, put a colander in the sink, use a can opener to open a can

of evaporated milk, and measure 1 cup grated Parmesan cheese.

6. When the timer sounds, pour the pasta and hot water into a colander in the sink.

Then use the tablespoon markers on the packaging as a guide to measure and add about 1

tablespoon butter or margarine, and top with chopped garlic and shredded zucchini.

Stir and cook until the garlic becomes fragrant, then pour and stir in a 12 ounce can of

evaporated milk. Let the evaporated milk, garlic and zucchini mixture warm for a

minute or two. Add the cooked pasta, stir and let the pot warm until the pasta mixture

starts to steam. As soon as the pasta mixture starts to steam, turn off the stove heat (to

avoid burning the pot), then add and stir in 1 measured cup of grated Parmesan cheese

and keep stirring until the cheese and evaporated milk are smoothly blended together.

This might actually take a little time depending on the coarseness of the Parmesan

cheese you're using. I used some coarsely shredded cheese recently and had to stir for

about 2 minutes until everything smoothed out. No problem.

7. Add and stir in a light dusting of ground black pepper and an optional shot of

balsamic vinegar.

8. Serve warm and either have as is or topped with additional grated Parmesan

cheese.

Alfredo Sauce" for uniquely easy to follow, step-by-step picture book directions.

Chef Bruce Tretter's "Quick Microwave Oven Cooked Tortilla Pizza"

Quick Microwave Oven Cooked Tortilla Pizza

Here's all you need to make a quick & easy, kid favorite and kid-safe-to-make tortilla pizza. The thing I love most about this recipe is that I learned it from my 11 year old daughter. Tortilla pizzas are great for lunch, snack or dinner and require only the commonly found ingredients and pieces of equipment listed below.

Ingredients

1 Tortilla

Tomato or Pasta Sauce

Grated (or sliced) Cheese (I used a mozzarella and cheddar pizza mix, but any will work)

Pepperoni (optional)

Equipment

Microwave Oven

Microwave Safe Plate

Pot Holder

Tablespoon

Table Knife

1. Use a tablespoon to spread a thin, even layer of tomato sauce over the entire tortilla.

2. Cover the sauce with grated cheese and either leave it as is or top the cheese with pepperoni (optional) or any other favorite pizza topping.

3. Quickly and carefully fold the tortilla in half and cook it in the microwave oven using HIGH heat for 30 seconds.

4. Use a pot holder to remove the cooked tortilla pizza from the microwave oven. The tortilla pizza is done when the cheese is melted.

5. Use a table knife to cut the tortilla pizza into 3-4 pieces and serve warm.

Conversations LIVE Celebrates Its 1000th Guest

On Friday, September 3, 2010, Mississippi native Cyrus Webb---host of Conversations LIVE---will celebrate another milestone in his career: welcoming his 1000th radio guest since the show began in July 2003.

Conversations LIVE began at WMPR 90.1 FM (a station owned by Charles Evers, brother of slain civil rights leader Medgar Evers) in Jackson, MS once a week and over the years has evolved to being carried by select radio affilliates and online worldwide through Blogtalkradio.com and other outlets up to six days a week. Though its purpose is to provide dialogue about issues and individuals that are making a difference in the world as well as give a voice to those who have a story to tell, Webb realizes that the show has achieved more than he could have ever expected.

Over the years Webb has talked to some of the biggest names in arts and entertainment along with up-and-coming individuals who are beginning to make a name for themselves, but what has become more important than their stature is the dialogue they create. Webb wants those listening to know that they can achieve the same success as those he has conversations with on each show. He sees himself as living proof of how ambition and purpose levels the playing field.

Take his personal story: a young man who struggled with his own insecurities and place in the world with no college education or formal training in broadcasting---yet he believes his faith in what was possible allowed him to take an idea for a radio show and transform that into a real program that has given birth to a tv show, magazine and book clubs that are all geared to educate and inspire.

On Friday, September 3, 2010 at 1p.m. EST (12p.m. CST./10a.m. PT), Webb will interview celebrity photographer Anthony Tilghman about his journey to success. Immediately following the interview, Webb will be joined by some of the Conversations family that have added their own flavor to Conversations, bringing in sports, faith, fashion and cooking. Catch the show live or via podcast at www.blogtalkradio.com/conversationslive .

What's next for Webb and the Conversations brand? Stay tuned and visit www.conversationsliveradio.com often for updates.

Chef Bruce Tretter's "Quick & Easy Cooking Tip": Orangeade

Chef Bruce Tretter's "Quick and Easy Cookng Tip": Orangeade or Soda

Shaken or Stirred, Orangeade or Orange Soda, As Is or Minted

Wow, I know the title's a mouthful. But, really, you can have this drink just the way you want it either shaken or stirred – I'm giving you full license to Bond – James Bond – you can choose to have that drink "shaken, not stirred" – or, you can stir it if you don't have a drink shaker. You can also have the drink either as orangeade made with water or orange soda made with sparkling soda water, and you can either have it as is or even more refreshing with a good shot of mint. Talk about freedom of choice: it's right here and it's all very easy.

To make one tall 12 ounce glass of fresh orangeade or orange soda, you'll need:

1 Lime or 1 Ounce Lime Juice

1 Orange or 2 Ounces Orange Juice

1 Tablespoon Sugar

1 Fresh Mint Sprig

Cold Water or Soda Water

Ice

Then, for equipment, you'll need:

Juicer

Drink Shaker or Measuring Cup (what I mean by a drink shaker is the two piece, metal and glass device you see bartenders use to shake and quickly cool drinks – if you don't have one, no problem. You'll be fine with a measuring cup and a spoon)

Drink Strainer (if you're using a drink shaker and mint)

Tall Glass

Tablespoon

Sharp Knife

Cutting Board

1. Cut a lime and orange in half and squeeze the juice either into a measuring cup or drink shaker glass. Add 1 tablespoon of sugar to the juice and stir until the sugar dissolves completely. Now, if you're making a minted version of this drink, rinse a fresh mint sprig with about 6-10 leaves on it under the tap and add it whole – without taking off any of the leaves – to the juice mix. Keeping the sprig whole makes it easier to remove it when you finish either shaking or stirring.

2. Now, to make things as easy to understand as possible, I'll first describe what to do if you're using a drink shaker and then describe what to do if you're using a measuring cup and a spoon.

Drink Shaker: Add 1-2 handfuls of ice to the metal piece of the drink shaker. Then add just enough water, if you're making orangeade, or soda water, if you're making orange soda to just start to float the ice – it won't take much. Then pour the juice mix from the shaker glass into the metal piece and slide the open end of the glass into the open end of the metal piece. Use both hands to keep the pieces together firmly with the metal piece always on the bottom and then give it all 10 or so brisk up and down shakes. If you're new to doing this, you might want to do the shaking over the sink in case the seal between the glass and metal pieces leaks a bit. When you're done shaking, twist the glass off the metal piece, which should always be on the bottom. Now either pour the drink and ice straight into a tall glass if you didn't use mint. Otherwise, cover the mouth of the metal piece with a drink strainer – and if you don't have a drink strainer you can use a tablespoon to hold back the ice and pour the drink into the glass. Then remove the mint sprig from the metal piece, add the ice from the metal piece to the tall glass and top off with more ice.

Measuring Cup: If you're using mint, add it to the juice in the measuring cup and then use the tablespoon to stir and rub the mint on the side of the measuring cup to release mint flavor. Then pour the juice mix into a tall glass making sure to hold back the mint piece if you're using mint. Fill the glass about 2/3's full with ice, add enough water for orangeade or soda water for orange soda to fill the glass most of the way full. Leave about an inch of free space at the top of the glass so you can stir the drink comfortably. So stir it up until the drink is evenly mixed and chilled. Then top off the glass with more ice & enjoy!
