Chef Bruce Tretter's "Quick and Easy Cookng Tip": Orangeade or Soda

Shaken or Stirred, Orangeade or Orange Soda, As Is or Minted

Wow, I know the title's a mouthful. But, really, you can have this drink just the way you want it either shaken or stirred – I'm giving you full license to Bond – James Bond – you can choose to have that drink "shaken, not stirred" – or, you can stir it if you don't have a drink shaker. You can also have the drink either as orangeade made with water or orange soda made with sparkling soda water, and you can either have it as is or even more refreshing with a good shot of mint. Talk about freedom of choice: it's right here and it's all very easy.

To make one tall 12 ounce glass of fresh orangeade or orange soda, you'll need:

1 Lime or 1 Ounce Lime Juice

1 Orange or 2 Ounces Orange Juice

1 Tablespoon Sugar

1 Fresh Mint Sprig

Cold Water or Soda Water

Ice

Then, for equipment, you'll need:

Juicer

Drink Shaker or Measuring Cup (what I mean by a drink shaker is the two piece, metal and glass device you see bartenders use to shake and quickly cool drinks – if you don't have one, no problem. You'll be fine with a measuring cup and a spoon)

Drink Strainer (if you're using a drink shaker and mint)

Tall Glass

Tablespoon

Sharp Knife

Cutting Board

1. Cut a lime and orange in half and squeeze the juice either into a measuring cup or drink shaker glass. Add 1 tablespoon of sugar to the juice and stir until the sugar dissolves completely. Now, if you're making a minted version of this drink, rinse a fresh mint sprig with about 6-10 leaves on it under the tap and add it whole – without taking off any of the leaves – to the juice mix. Keeping the sprig whole makes it easier to remove it when you finish either shaking or stirring.

2. Now, to make things as easy to understand as possible, I'll first describe what to do if you're using a drink shaker and then describe what to do if you're using a measuring cup and a spoon.

Drink Shaker: Add 1-2 handfuls of ice to the metal piece of the drink shaker. Then add just enough water, if you're making orangeade, or soda water, if you're making orange soda to just start to float the ice – it won't take much. Then pour the juice mix from the shaker glass into the metal piece and slide the open end of the glass into the open end of the metal piece. Use both hands to keep the pieces together firmly with the metal piece always on the bottom and then give it all 10 or so brisk up and down shakes. If you're new to doing this, you might want to do the shaking over the sink in case the seal between the glass and metal pieces leaks a bit. When you're done shaking, twist the glass off the metal piece, which should always be on the bottom. Now either pour the drink and ice straight into a tall glass if you didn't use mint. Otherwise, cover the mouth of the metal piece with a drink strainer – and if you don't have a drink strainer you can use a tablespoon to hold back the ice and pour the drink into the glass. Then remove the mint sprig from the metal piece, add the ice from the metal piece to the tall glass and top off with more ice.

Measuring Cup: If you're using mint, add it to the juice in the measuring cup and then use the tablespoon to stir and rub the mint on the side of the measuring cup to release mint flavor. Then pour the juice mix into a tall glass making sure to hold back the mint piece if you're using mint. Fill the glass about 2/3's full with ice, add enough water for orangeade or soda water for orange soda to fill the glass most of the way full. Leave about an inch of free space at the top of the glass so you can stir the drink comfortably. So stir it up until the drink is evenly mixed and chilled. Then top off the glass with more ice & enjoy!

Chef Bruce Tretter Presents "Cajun Blackened Salmon Fillets"


Resident chef Bruce Tretter gives you another "Quick and Easy Cooking" tip, featuring Cajun Blackened Salmon Fillets.

Cajun Blackened Salmon Fillets

"This takes about a minute to prepare and 15-20 minutes to cook.

"The salmon I used the first time I made this recipe was wild caught Alaskan sockeye salmon. I'd done some reading lately about the tremendous health & nutrition benefits of wild caught salmon versus farm raised salmon. And though not all farm raised salmon is the same – some of those salmon are raised in real streams that are penned off, and those salmon are much healthier to eat than salmon that's been raised in large landlocked containers.  But, of course, as you'd expect the wild caught stuff is the real deal. It's much higher in protein content, has a greater Omega-3 fatty acid content, which is good fat that goes after saturated fats in your body and is just more flavorful.

"As for portions, I'd recommend about 1/3 pound of fish per person, and if you're making a dinner for 4 people, I'd round that out to 1 ½ pounds of fish."

Ingredients

1 ½ Pounds of Salmon fillet – with the skin on, which actually helps with cooking

Bayou Cajun Seasoning (or your favorite seasoning)

Cooking Oil (I used canola oil but olive or vegetable oil works fine)

Lemon or Lime

Equipment

Frying Pan with Top

Spatula

Sharp Knife

Cutting Board

1.         Put the frying pan on the stove and turn on the burner to MEDIUM.

2.         While the pan warms, shake on a very generous coat of Bayou Cajun Seasoning (or your favorite seasoning) on the flesh side of the fish.  There's no need to shake any seasoning on the skin side because the skin will come off after cooking. 

3.         After a few minutes of warming, check the frying pan for proper cooking temperature by running some tap water on your fingers and flicking the water into the pan.  The water should sizzle and evaporate quickly.

4.         Pour about a 2 inch in diameter spot of cooking oil into the warm pan, and swirl the pan to coat the surface with a thin layer of oil. You'll want the pan to be wet enough with oil that if you tip the pan, you'll get a little puddle along the edge on the low side.  Then, right away, put the fish in the pan, flesh and spice side down and cover with the pan top. 

5.         Cook until you see the fish flesh start turn opaque by looking at it from the side. Also lift the fish piece with a spatula and check to see that the spices and flesh underneath are becoming dark brown. Then turn the fish piece over skin side down, cover again with the pan top and cook until the fish flesh is opaque throughout.

6.         Serve fresh out of the pan, make sure to remove the skin and top with a fresh squeeze of lemon or lime.

Pan Fried Fish Fillets

 

Ingredients (for 4)

1 ½ Pounds Fresh Fish Fillets

Flour

Paprika

Garlic Salt

Ground Black Pepper

Cooking Oil

Equipment

10 – 12 Inch Frying Pan

Spatula

Tablespoon

Plastic Bag

 INSTRUCTIONS

1.         Put the frying pan on the stove and warm it over MEDIUM heat.

2.         While the pan warms, add to a plastic bag1 tablespoon flour, a good dash of paprika, ½ tablespoon garlic salt and ¼ tablespoon ground black pepper.  Give the dry ingredients a quick shake in the bag to mix them together.  Then add the fish fillets, close the bag top snuggly and give the bag a shake so that all the fish pieces are evenly coated.

3.         Check the frying pan for the proper cooking temperature by wetting your fingers with tap water and flicking the water into the pan.  The water should sizzle and quickly evaporate.  Then add a good shot cooking oil and give the pan a quick swirl by rolling your wrists to coat the pan bottom generously.

4.         Add the fish fillets making sure the pieces don't overlap each other and cook for about 3-5 minutes until the edges of the fish start to turn opaque and bottoms get browned.  Then turn the fish over with a spatula and cook for another 3-5 minutes until the bottoms are again browned and the inside of the fish is opaque throughout. If your fish is still translucent inside, keep cooking until it is completely opaque.

5.         When the fish is cooked through, scoop it out of the pan with a spatula and serve warm.

(Tues. Aug. 3, 2010--- Tom Burrell of the Black Farmers and Agriculturalists Assoc. on Conversations LIVE Radio


(Tues. August 3, 2010) Hours after he will hold a press conference in front of the USDA building in Washington, D. C. calling for the resignation of USDA Secretary Tom Vilsack, Mr. Thomas Burrell, President of the Black Farmers and Agriculturalsts Assoc. will talk with Cyrus Webb on Conversations LIVE Radio.

This will be a live interview beginning at 8:30p.m. EST (7:30p.m. CST/5:30p.m. PT), and the two will talk bout the lawsuit brought by the Black Farmers, the firing and events surrounding the dismissal of Shirley Sherrod and why Burrell feels that the USDA Secretary must go.

At the press conference that will be held at 10a.m. EST that day (Tues. Aug. 3, 2010, the Black farmers cite the hasty, unwarranted firing of Sherrod and the reluctance to honour a Settlement Agreement, that provides restitution to Black farmers who were discriminated against by the USDA, as but two reasons why Secretary Vilsack should step down. "Secretary Vilsack's quick actions in the firing of Shirley Sherrod was unfortunate and it proves that there continues to be an untenable culture of racial discrimination at the Department of Agriculture," says Tom Burrell, President of the BFAA, Inc.

"On his watch, some 70,000 Black farmers and their families stand to lose their homes and land, because he is also trying to avoid giving them the restitution that they were awarded by a federal court under the Pigford Consent Decree Settlement Agreement," Burrell continued.

The Settlement Agreement was the result of a 1999 lawsuit filed against the USDA because of decades of discrimination against Black farmers. The suit stemmed from Black farmers being denied access to farm loans and other credit and benefit programs that were readily available to their white counterparts, a practice that continues today.
